Potato Soup

6 c cubed potatoes
5 c water
1-1/4 tsp salt
1 chicken bouillon cube
1 stalk celery, cut fine
1/8 c chopped onion
1/8 c minced carrot
1/8 tsp pepper

In pot, place all the above ingredients and bring to a boil. Simmer until potatoes are tender, mash slightly with potato masher. Melt 2 tbsp margarine in a saucepan. Stir in 2 heaping tbsp of flour. Stir in 1-1/2 c milk and 1/4 tsp salt. Cook, stirring constantly until milk comes to a boil. Add 2 c grated cheese. Stir until smooth. mix into cooked potatoes. Adding more salt and pepper to taste.

Yum! I like to make Baked Potato soup, but it doesn't have the carrot - I'll have to try that!
